Purpose:
The purpose of this role is to perform routine and non-routine microbiological analysis on samples from raw materials, in-process stages, water sources, the production environment, and finished products. These tests check for the presence of undesirable microorganisms like bacteria, yeast, and fungi.
Job Responsibilities:
Microbiological Testing & Analysis
- Microbiological analysis of raw materials, in-process samples, final starch products, and by-products (e.g., gluten, fiber, germ).
- Test for microbial counts, yeast & mold, coliforms, E. coli, Salmonella, and other specified pathogens.
- Analyze process water and utility systems (cooling tower, boiler feed, condensate, etc.) for microbial growth.
Environmental Monitoring
- Perform swab tests of production and packaging areas to monitor surface and air quality.
- Ensure compliance with Good Manufacturing Practices (GMP) and sanitation standards.
- Maintain records of environmental monitoring trends and implement corrective actions by keeping constant monitoring and control on the process.
Process & Hygiene Control
- Verify effectiveness of Cleaning-in-Place (CIP) and sanitation procedures through microbiological validation.
- Work closely with production and Quality teams to identify contamination risks and control measures.
- Support root-cause analysis in case of contamination or product deviations.
Documentation & Reporting
- Maintain accurate microbiological testing records and ensure traceability of samples and results.
- Prepare daily, weekly, and monthly reports on microbiological performance indicators.
- Ensure compliance with ISO, HACCP, FSSC 22000, and other relevant quality management systems.
Laboratory Management
- Maintain laboratory instruments, incubators, media preparation, and culture stock.
- Ensure calibration, validation, and cleanliness of lab equipment.
- Manage microbiological reagents and consumable inventory.
Continuous Improvement & Compliance
- Participate in internal audits and external inspections (e.g., food safety audits, customer audits).
- Train production and sanitation staff on hygiene and microbiological awareness.
- Support projects related to product quality improvement, and process optimization.
